Hemp Oatmeal Chocolate Chip Cookies (Gluten-Free)

1 cup rice flour

1/2 cup oatmeal

1/2 cup hemp seed or powder

2 tablespoons  potato starch

2 teaspoons baking powder

1/3 cup date sugar or honey

1/2 cup chocolate chips

1/2 cup soft butter or oil

1 egg

1/4 cup water

Combine flour, oatmeal, hemp, potato starch, baking powder and date sugar in mixing bowl. Stir to mix. Add chips. Beat together butter, egg and water and add to flour mixture. Drop by spoonfuls onto oiled baking sheet. Bake in 350 degree F. oven 12 to 15 minutes or until browned on edges. Makes 36 cookies.

Modification: whole grain flour can be substituted for rice flour and potato starch can be omitted. Two eggs can be used instead of 1 egg and 1/4 cup water.

Hemp Banana Muffins  (Gluten-Free)

1 cup rice flour

2 tablespoons potato starch

1/2 cup hemp seed or powder

1 tablespoon baking powder

1/2 teaspoon ground cinnamon

2 tablespoons honey

1 egg

2 tablespoons  soft butter or oil

1 ripe banana, chopped fine

1/3 cup water or fruit juice

Combine flour, potato starch, hemp, baking powder and cinnamon in mixing bowl. Stir to mix well.  Beat together honey, egg, butter, banana and water. Mix liquids into flour  mixture. Spoon batter into 6 paper-lined or oiled  muffin cups. Bake in 350 degree F. oven 20 to 25 minutes, or until toothpick inserted into center comes out clean.  Makes 6 muffins.
